No.
The Intel H610 chipset does not support overclocking of any kind (including memory overclocking, aka XMP).

In the specifications of the MAG INFINITE S3 14 NUC5 - 1624 ES with Intel Core i5 Processor 14400F it says that the H610 chipset does support DDR 5 memory at 2800 (5600), you can check it in the PDF attached to this message. I have tried to put the factory integrated 2x8GB memory at 5600 mhz (not compatible with XPM) and they only work at 4800 mhz, there is no way to recognize 5600 or 5200. I have removed those memories and put two Crucial kit 32GB (2x16) 1.1v CL46 compatible with XMP 3.0, and configured with XMP and they don't work at 5600/5200 either, they only work at 4800Mhz. ¿Marketing error? ¿BIOS error?

If you read again the motherboard specifications you'll find this line:
*5600MHz (with Core i7 processor and above)
So DDR5-5600 is supported, but they have to be native.
That means DDR5-5600 at 1.1V
No overclocking (XMP).
Those rated at 5600 are using DDR5-4800 chips overclocked and overvolted and they won't work at 5600 with the Intel H610 chipset.
So you need to find a DDR5-5600 kit with SPD profile at 5600.

Pay attention to that Voltage 1.1V and JEDEC 46-45-45
