These are the measurements for the thermal pads for your GPU. All are in millimeters. Hopefully this helps.
If you can't find 1.25 or 2.75 mm pads, I would err on the side of the next thickness you can find (1.5mm maybe, and 3mm).

I believe according to the graphic, they are 1mm.

Would you please ask your contact about the RTX 3080 12GB Ventus video card's thermal pad thickness as well?
My Ventus card is working fine for now, but I'd like to know the correct thermal pad thickness in case a repadding is required.

We do our best to support people if we can. Many don't understand that even as moderators, we aren't privy to any special information. We're literally users just like you. We have some MSI contacts, and they do help as best as they can, but there's always a limit to what we can do, unfortunately.
Ultimately, we try to be a middle person between users and MSI, and provide some feedback to MSI in hopes they can improve things in the long run.

Can you please confirm that the 1mm pads in the middle are the "main" memory modules? I just want to replace the front main memory pads on mine.

Use the image above. 1.25mm. There are no 1mm pads.

I've got a 3080 gaming z 10G model. Any chance I could get a thermal pad thickness chart for my model? Both the heatsink and backplate? Thank you much!

Also I only have. .5, 1, 1.5, and 2mm pads.

Could not say, I know as much about it as you do and you have the advantage you have the actual GPU to check.

The best we can do I ask for the details and well there is also the problem that Surface mount components can change on the same models between batches.

This is why Serial numbers are needed as they include the Batch number
Serial Number also shows what V-Bios is on the GPU as this also changes between batches or Generations of the Same GPU.

The problem is I got the card and majority of the pads were removed, so I don't know the original thickness either.

Whom would I provide that other info to?
