Post edited because I have now confirmed it is an MSI X58 Pro.

2nd problem remains, it will NOT give me the option to boot from USB.
I have Legacy USB support enabled in BIOS, all ports (MB and case front) have been tested and work properly.

Make sure your USB is bootable, besides that try booting from it using boot menu during startup.

USB is bootable, tested on another machine.
F11 has no response. Keyboard works fine, tested on another machine too...

Problem has miraculously solved itself, after a couple of restarts doing other things, it suddenly appeared in the BIOS.
I guess it just needed a few hours to think about it...

Also, it now turns out it's actually an MSI X58 Pro-E. Confirmed by painstakingly comparing MB manuals and photos.
CPU-Z is the only tool that got it right, but only after I flashed BIOS to the latest version. Doesn't seem to make any practical difference though.
This thing is getting on my nerves :)
